Creamy Brunch Eggs 1/4 c Parkay margarine
1/4 c Flour
2 c Milk
1/2 ts Salt
Dash of pepper
1 c Shredded sharp Cheddar
8 Hard-cooked eggs, sliced
4 oz Canned mushrooms, drained
1/4 c Green onions, sliced
2 tb Chopped pimiento
4 English muffins, split, toasted
Make a white sauce with margarine, flour, milk and seasonings. Add cheese; stir until melted. Add eggs, mushrooms, onion and pimiento; heat thoroughly. Serve over muffins.
