Cinnamon Apple-nut Muffins

3/4 c Peeled, finely chopped apple
1/2 c Sugar, divided
1 ts Ground cinnamon
1 c Flour
3/4 c Whole wheat flour
2 ts Baking powder
1/4 ts Salt
1 c Milk
2 tb Butter, melted
2 ea Egg whites, lightly beaten
1/4 c Chopped walnuts
Sugar for topping

Preheat oven to 400 degrees. In small bowl, toss apple with 1/4 cup of the sugar and the cinnamon. In large bowl, combine remaining 1/4 cup sugar, the flours, baking powder and salt. Mix together milk, butter, and egg whites; stir into dry ingredients just until moistened. Add apple and nuts. Fill lightly greased muffin cups 3/4 full; sprinkle each lightly with sugar. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Makes: 1 dozen muffins
