Rhaburber Kuchen 2 Sticks Butter
1 1/2 c Sugar
5 Or 6 Eggs
1 ts Vanilla Extract
2 1/4 c (Scant) Flour
1 ts Salt -- scant
5 c (To 6) Rhubarb, cut up
2 tb (Or 3) Sugar
Cream butter, sugar, and vanilla until fluffy. Add eggs, one at a time; add flour and salt. Spread on cookie sheet and arrange cut-up rhubarb on top. Sprinkle with sugar. Bake in 350 F oven 40 to 45 mins. Cool. Slice into rectangles. Serve with whipped cream.
